Teaneck Baker 'Cuts A Mean Apple'

TEANECK, N.J. -- The cakes that became locally-famous 6 years ago when Angela Logan started baking them at home to pay off her mortgage has been a cheerful, clean and inviting shop in Teaneck for 6 months now.

Logan has has been selling her sweet delights at Mortgage Apple Cakes on Chestnut Avenue in one way or another since the day in 2009 that she had to come up with a lot of cash, fast.

She licensed her recipe to Bake Me a Wish for a year, then hit the Farmer’s Market circuit with husband, Melvin, who “cuts a mean apple.”

“We followed the farmer’s market for three years, and I learned a lot,” she said. “I learned about equipment, materials, models for doing business, selling seasons and supplies.” 

She learned that January is a difficult month because it’s cold and everyone is on a diet -- so she has been giving away free, delicious coffee with a $3 purchase to spur winter sales.

When Zoe’s Cupcakes closed, Logan was ready and took advantage of the space that was already a bakery, and was perfect for her needs. And the store is gorgeous. 

It’s sparkling clean, has a warm and cozy feel, with cakes, cupcakes and scones displayed behind glistening glass panels. It's the perfect stop on a gray and rainy day -- or any day.

It’s decorated in “apple colors,” she says -- red, brown, creamy white walls, a touch of green. Logan runs the front and Melvin dices 50 lbs. of apples per week, with equipment he adapted for the job himself.

She sells the original apple cake, apple rum cake, scones, cupcakes. apple pound cake, apple upside down cake. All are made with a mix of Gala, Delicious, and Granny Smith apples. 

She uses unbleached, un-bromated white flour and a “golden” whole wheat flour that is lighter in texture.

The apples are chosen for their flavor.

The recipe was developed over many years of baking and experimenting. Is it done?

“Well, you never stop trying to improve,” she said.
