Weston Beekeeper Treats Honey Like Wine

Marina Marchese is on a mission. She wants you to know that honey, like wine, is not all the same. That's why she calls herself the "honey sommelier."

Marina is a beekeeper in Weston and the author of Honeybee, Lessons from an Accidental Beekeeper. She is also president of the Back Yard Beekeeper's Association (BYAB), an organization with more than 250 members. On July 3, Marina is running a honey tasting laboratory workshop that includes a tour of her garden and her 16 beehives. The workshop will focus on artisanal honey and how it is made. Guests will be guided through a sensory analysis of different honeys and learn how to evaluate them. "A honey's color and flavor is determined by the nectar source," she says. Beekeepers will often move their hives to areas where trees or plants are in bloom so that they can feed on the nectar from the flowers.
