Popular Heibeck's Food Stand Reopens On Route 7 In Wilton

What says summertime better than New England lobster rolls piled high with homemade sauce ?

If you live or travel anywhere between Norwalk and Danbury on Route 7  and need a food break you're in luck because Heibeck's Stand at 951 Danbury Road in Wilton is now open for spring and summer.

Here you also find Korean tacos and piled high 3/4 pound burgers and ice cream sundaes made with house-made cake and compote on an extensive and modern roadside menu.

"We had 45-minute waits over the first weekend following our April 10 opening," owner Bobbie Heibeck told Daily Voice. Her business partner is son Skylar Smith.

But worth the time investment because what you get is freshly cooked food made to order, according to the owners, and mouth-watering meals, yelp posts say.

"Delicious comfort food at its finest!! I've had this roadside food stand on my radar for some time, and been drooling over their gluttonous food porn posted to their Instagram page for a month," an Eric H. of Wilton wrote.

Smith told how Heibeck's oened in 1931 by his great-aunt and great-grandmother.

"My mother used to work here as a kid. This is the only job that I have ever had and this will be my 12th season," he continued.

Smith and his mom "took over the business five years ago after it had been out of the family for many years," Smith said.

They added a modern twist on classic items and have specials crafted by the stand's manager Rachel Williams, every week from handcrafted sundaes to a current Korean beef taco or wedge.

"Most of our sauces are made from scratch as well as our menu items, like the falafel. Our soft and hard ice cream is all natural," Smith said.

Not surprisingly the lobster roll is "most popular" but also the various burgers and ice cream cones, he continued.

"Our lobster rolls are sauteed in a house made wine butter sauce and served on a toasted New England roll."

Heibeck's has a "cowboy burger"  made from  a fresh 80/20 steak burger topped with homemade slaw, BBQ, frizzled onions and pepper jack cheese on a freshly baked local bun.

There is also the classic Heibeck Burger with lettuce, tomato, sour pickles, and our Heibeck sauce.

Eric H. on yelp described the burger. "Assembled in a messy-in-a-good-way fashion with lettuce, tomato, hand-cut pickles, and American cheese this is the quintessential beef sandwich that you dream."

Smith said the food is served "hot and fresh" and his business has ample parking out back.

All you have to do is drive in and park then walk up to the window, place your order, and you get a number.

Ice cream is served in a breezeway on the side of the foods sand. There are barstools to sit and wait then eat.

Heibeck's dining patio is BYOB and it is shaded and has string lights at night.
