Gray Goose Lands in Southport

Kevin McHugh has a flair for restaurant development and he’s bringing his inimitable sense of style and his keys to success to the Southport space formerly occupied by The Wine Knot. The Gray Goose will blend old world tavern charm with cool, contemporary accents to make for a comfortable but hip scene.

“The building is 100 years old,” says McHugh. “So we’re using a lot of reclaimed materials, like silver and grey barn siding, to build the restaurant. But we’re also implementing modern touches, like lighting fixtures with filament bulbs and a carrera marble bar top to add funky style.”

The space will feature a 30-seat, covered patio and both indoor and outdoor fireplaces. McHugh says the overall theme is that of a European tavern and thus he chose a British-pub-style name.

The Gray Goose aims to attract an adult crowd with a menu geared toward organic ingredients and healthful dishes that McHugh and his partner Tommy Febbraio of Fairfield hope will appeal to members of the Southport Racquet Club next door. “We’ll be doing lots of salads, small plates, and items for sharing,” he said. “And we’re keeping our price point under $20.” Tom Carney of Fairfield will serve as executive chef. Carney is known for his work many years ago as chef at Fairfield’s Spazzi.

McHugh, a Weston resident born and raised in Westport, is well known as the former co-owner of the original Match restaurant and its sister spot, The Loft Martini Bar, in South Norwalk, as well as for his work in creating The Little Pub in Ridgefield.  He says plans are in place for a late June opening for The Gray Goose.
